Malabar Paratha is a popular South Indian flatbread that hails from the Malabar region of Kerala. Known for its flaky, layered texture and buttery richness, it's a favourite accompaniment to a variety of curries and gravies. Malabar Paratha is made from refined wheat flour (Maida), water, a touch of sugar, salt, and oil (sometimes with milk or egg for softness). The dough is kneaded until it's elastic and smooth, then allowed to rest. It's rolled out, folded repeatedly to create layers, and finally pan-fried until golden brown and crisp on the outside while remaining soft and chewy inside. This is partially baked and frozen at -12℃ to -18℃.
