Coconut Pancakes

  1. Mix 1/2 tin Amul Mithai Mate, 2 cups grated coconut, nuts and raisins.
  2. Blend 1 cup maida, 4 tbsp rice, a pinch of soda bicarbonate and water to make a thin batter.
  3. Heat 1 tbsp ghee in a frying pan .
  4. Add 2 tbsp batter and coat the pan. When it browns, add Mithai Mate mixture in the center and roll.
  5. Repeat to make 15-20 pancakes and serve.
