Egg Diamond Cuts

Ingredients:
  • 12 eggs;
  • 3/4 kg. mawa, crcumbled;
  • 350 g. sugar (or more);
  • 25 g. almonds, blanched and sliced;
  • 25 g. pistachios, sliced;
  • 25 g. raisins;
  • a few strands saffron;
  • 2 sheets silver varakh;
  • 1/2 cup ghee.
Method:
  1. Beat the egg whites till stiff. Add the egg yolks and beat well. Mix in the mawa, ghee, sugar and half the dry fruits (almonds, pistachios and raisins), uniformly. Add the saffron. Pour this mixture into a greased baking dish, and bake in a moderately hot oven till half done. Sprinkle the remaining dry fruits on top and bake till done. When cool, cut into diamond shapes. Decorate with silver foil.
