Amba Barfi

Ingredients:
  • 18 ripe alphonso mangoes;
  • 6 cups sugar or more;
  • 1 tsp. cardamom powder (optional);
  • 1/2 cup ghee or more.
Method:
  1. Extract mango juice and churn it in a mixture till the juice is smooth and there are no lumps in it.
  2. Grease a heavy bottomed pan well. Put the mango juice and sugar in it. Keep stirring on a low heat till the mixture is thick. Add cardamom powder and ghee and keep stirring till the mixture leaves the sides of the pan and forms a lump. Remove from heat. Pour into a greased plate and gently pat it with a greased spoon till smooth. When cool, cut into pieces. Store in a dry airtight jar.
