Golden Rasbadas

Ingredients:
  • 2 cups sugar;
  • 1 cup gram dal, soaked overnight;
  • 1 cup homemade paneer;
  • 25 g. raisins;
  • 10 cashewnuts, chopped;
  • 2 tsp. sugar, powdered;
  • 1 tsp. flour;
  • 5-6 cardamoms, powdered;
  • 1 tsp. flour;
  • 5-6 cardamoms, powdered;
  • 3 cups water;
  • ghee for deep frying.
Method:
  1. Mash and knead paneer till soft. Add sugar and cardamom powder and mix well.
  2. Parboil gram dal till just tender. Drain out the water. Add flour and mash well. Divide and roll into small balls and flatten them Stuff each gram dal ball with a little paneer filling, one raisin and a piece of cashewnut. Close and roll into a round shape. Heat ghee and fry the stuffed balls over low heat till done. Boil sugar and water to make a two string sugar syrup. Switch off the gas. Add the fried balls to warm syrup. Serve when cold.
